GEFILTE FISH

pro: ge (hard g and short e as in "get") filta ( short i as in "filter)

 

A traditional Jewish fish recipe in
which fish, such as white fish, is
chopped up after the bones are removed
mixed with some flour or matzo meal(grounded -up
matzo--a flat cracker made from flour and water
and baked)
;flavorings/seasonings are added.

The mixture is then shaped into round
elongated balls. These are sometimes put in the skin of
fish and poached or cooked in soup
with carrots and onions.
